What kind of intereaction with object, NPC etc. will we be able to encounter as we play?

In Phase 1, there will be minimal interaction with objects. In Phase 2 and beyond, interactions such as Slicing will exist on objects. NPCs can be talked to, give quests, and play Pazaak with the player. There are other, unannounced interaction options that we haven't shown yet.

Probably just accessible on special occasions, since they're lacking very much in terms of work and functionality (read: they're buggy as hell.). ;)

Bump. Also can we use force powers while on vehicles?

The problem with using force powers while in a vehicle is this:
Say you want to use force push, you might flip your vehicle which would be hilarious to watch and then we would point and laugh at you. xD
Also, if you decide that you want to use sith lghtning on somebody whom you hate, you might end up hitting part of your vehicle and generally, metal conducts electricity. Once again we would point and laugh at you.
But using force powers whilst riding a vehicle would be awesome.
